Oarweed / Tangle Kelp / Laminaria Digitata
Kombu is filled with umami (brothy or meaty taste). It’s not fishy at all, with a briny, almost mushroom like flavour. The white powder on the outside is where much of the flavour is, so don’t wash it off. It is widely used in Japanese cooking and can be used in a variety of ways (in broths, pickled, eaten fresh, deep-fried, etc.).
